Okay, I just made this and it’s fantastic.
1 cup white rice (not instant or that fast cooking stuff)
1 can black beans (drained, reserve juice)
1 cup chicken stock
enough water to bring liquid amount to 2 1/2 cups
some olive oil
1/2 bell pepper diced finely
same amount of onion diced finely
3 garlic cloves diced finely
1 tsp tomato paste
~1 tsp chili powder
~2 tsp parsley
salt
In a saucepan heat olive oil and sweat garlic, onions, and bell pepper. When the onions are translucent, stir in tomato paste, keep stirring and let it cook a minute or so. Add rice. Add liquids, stir. Add chili powder, parsley, and some salt. Bring to boil, add beans, reduce heat, cover and simmer for, um, till the rice is done.
Share and enjoy.
Replace the bell pepper with Jalepeno and add about a tsp of ground cumin seed, and it will be even better. A better complete protien you will never have.
So, basically, you just made chili?
Rice in chili? That’s crazy talk. It’s nothing like chili. No heat at all. Just lots of flavor.
