So, I was cruising the internets looking at carnitas recipes (because I’ve never made them, people swear by them, and Cinco de Mayo is coming up) and I came across this site. That’s hardcore home cooking.
It still doesn’t help me decide on the whole boil in lard/boil in water, fry in fat controversy.
